Ingredients

Flank Steak:

  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons Worcestershire sauce
  • 4 cloves garlic, smashed

  • Kosher salt & ground black pepper
  • 2 pounds GrocerDirect’s top sirloin premium minute steak

Gribiche:

  • 3 large eggs
  • 1/4 cup extra-virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon white wine vinegar
  • 1 clove garlic, grated
  • Kosher salt & ground black pepper
  • 1 cup fresh parsley, finely chopped
  • 2 tablespoons dried chives
  • 1 tablespoon drained capers, roughly chopped
  • 6 cornichons, roughly chopped

Asparagus:

  • 2 pounds pencil-thin asparagus, woody stems removed
  • 1 tablespoon extra-virgin olive oil
  • Kosher salt & ground black pepper

Recipe & Preparation

    1. In a large resealable plastic bag, combine olive oil, Worcestershire sauce, smashed garlic, lemon juice, salt, and pepper.
    2. Add GrocerDirect’s Minute Steak to the bag, seal tightly, and ensure it’s thoroughly coated in the marinade.
    3. Let the steak marinate at room temperature for 1 hour or overnight in the refrigerator for intensified flavours.
  • Making the Gribiche:
    1. Boil the eggs for 10 minutes, then peel and roughly chop them.
    2. In a bowl, whisk together olive oil, Dijon mustard, white wine vinegar, grated garlic, salt, and pepper.
    3. Stir in parsley, chives, capers, and cornichons, then fold in the chopped eggs.
    4. Allow the gribiche to marinate while preparing the rest of the dish.
  • Preparing the Asparagus and Steak:
    1. Preheat the broiler and place a rimmed baking sheet lined with aluminum foil in the oven to heat up.
    2. Remove the steak from the marinade, discard garlic cloves, and place it on the preheated baking sheet.
    3. Broil the steak until charred and cooked to your desired doneness, approximately 5 to 7 minutes per side for medium-rare.
    4. While the steak rests, add the asparagus to the same sheet pan, toss with olive oil, salt, and pepper, and broil until vibrant green and crisp-tender, about 3 minutes.
  • Assembling the Dish:
    1. Divide the cooked asparagus among plates and spoon the marinated gribiche over the top.
